Currently

Hello sweet friends and welcome to Wednesday!!! Can you believe we are already in the middle of the week!!!! I am so pumped because this weekend we are moving into our new place and I could not be more excited! I wanted to bring you guys a currently post since I was MIA for a few weeks preparing for my move! So here is a little snippet of what I have been up to and I would love to know what you are doing currently too!!!





Drinking/Eating. Starbucks Strawberry Acia Refresher with 2 pumps of mango. Seriously you guys this is amazing and definitely my new summer drink!! I also have been making this  caprese chicken and these  banana chocolate chip muffins. They are so good and such an easy breakfast when your on the go!



Planning. I want to take a vacation this year, preferably I want to go to New York City at Christmas time. So I am looking into prices and ideas and starting to plan something! Have any of you been to NYC before? What are your favorite things to do while your there? Also I have been planning some FUN things for this little blog of mine and I cannot wait to share them with you soon!

Dreaming of. Laying out by the pool this summer, crossing off my summer bucket list, and

 

Wearing.  Lots of boyfriend jeans like these and these  . I also am in LOVE with these  perfect tee's from Gap. In the summer I love to throw on a cute pair of jeans and a plain tee. There is something so easy yet stylish about it! Pair it with a pair of Nike's for errand running or a cute pair of wedges
for brunch with your friends!



Enjoying. The warm weather we have been having. It's a perfect 70-80 degrees with very little humidity and it has been HEAVENLY!!!

Loving. Finding new fun decor pieces for my new place, spending time with my family and friends, and MOVING!!!!!!!!!!!!!

Watching. The Bachelorette, Real Housewives of Dallas. I have bee re watching The West Wing on Netflix and I started watching The Path on Hulu. Both I highly recommend! Also did any of you catch the trailer for the new season of Real Housewives of New Jersey?? Jersey is my FAVORITE of the Real Housewives franchise and I am PUMPED for it to premiere!!

Caprese Chicken

Happy Monday sweet friends! I hope you all had a great weekend. Mine was packed with fun things and I could not be happier that I got so much accomplished! I wanted to apologize that things have been quiet over here on the blog. With packing for our big move and a few other things I had to take a little break from my blog. I am so happy to be back and to be sharing a delicious yummy recipe that is PERFECT for summer with you! Anyone else love Caprese salad as much as I do? Mozzarella, Tomato, Fresh basil, and Balsamic.... Yes Please. Any chance to have this easy and delicious salad sign me up. I thought it would be even better with a piece of grilled chicken! This is an easy recipe that I am sure will be a family favorite!!
 
 
 
 
Grilled Caprese Chicken:
 
4 Boneless Skinless Chicken Breasts
 
4 Slices of Fresh Mozzarella Cheese
 
2 sprigs leaves removed Fresh basil
 
1 Roma or Heirloom Tomato sliced
 
2 tbsp. Balsamic Vinegar
 
2 tsp. Dijon Mustard
 
2 tsp. Brown Sugar
 
3 tbsp. Olive Oil
 
 
1. Whisk together your Balsamic, Dijon, brown sugar, and Olive Oil in a separate bowl.
Brush mixture onto chicken
 
2. Grill your chicken till it's cooked thoroughly
 
3. Once chicken is cooked through plate and top with mozzarella, tomato, and fresh basil.
 
It you want to make it extra yummy you can make a balsamic reduction and drizzle that on top too!
 
 
Balsamic Reduction:
 
1 cup balsamic vinegar
 
Put cup of balsamic into a saucepan on the stove and bring to a boil
Then reduce to a strong simmer and watch it stirring occasionally.
Wait until balsamic has reduced to 1/3 or mixture coats a spoon.
let cool for a few minutes and it will thicken.
 
Drizzle this heavenly goodness onto your chicken and enjoy!

Happy Wednesday sweet friends! I hope you all are having a great week so far! It's a bit rainy and cloudy here this week but other then that it's been great! Five on Friday

Hello hello sweet friends it's FRIDAY!!!!!!!!!!!!!!!! Can you believe it. The weekend is finally here and I could not be happier! I have a jammed packed event filled weekend and I am excited to celebrate with friends and have some fun. After my last few weekends of packing and organizing I am pumped to celebrate a few events with some friends! I am back to linking up for Friday Favorites  and Five on Friday . One// I am loving these lip clothes by Bite Beauty. I know that a Kleenex can work well to remove lipstick but when your wearing bright bold colors it's nice to have these to quickly remove them from your lips and not leave any stains or smudge. You can buy them here.


Two// My new favorite drink at Starbucks is a Strawberry Acai Refresher with 2 pumps of Mango. Seriously its the bomb.com. Go try it this weekend and thank me later!


Three// I LOVE history and found an awesome mini series on Hulu that you all should watch. Titanic the Mini series is amazing and giving me Downtown Abbey withdrawals..... If you love history or want a good quick series to watch hop on Hulu and watch this one! I am always looking for new shows to watch too so if you know of anything drop me a comment below!

 
Four// I made the BEST dinner last night for Cinco De Mayo. Carne Asada, Mexican corn salad, and Spanish rice. I can't wait to share the recipe with you all! It was a hit at my house and I know that I will be making it again!

Summer Bucket List

Hello sweet friends! How is your week so far? This week is pretty busy at work but it's also flying by. I have been enjoying this beautiful weather we have been having and I can't wait for the weekend!  Can you believe that summer is almost here? We are 5 months into this year and it's crazy! I know that as you grow up the years fly by but wow they are going fast! I have been getting really excited about my move coming up and I have been dreaming of the fun things I want to do this summer. So today I want to share with you my Summer Bucket List! I try to write a bucket list for each season so that I can enjoy them for what they are. I think it's so fun and it gives you a fun little checklist to cross off!

Homemade Taco Seasoning


Hello sweet friends!! I hope you all are having a great Monday so far. How was your weekend? I had a great time packing and hanging out with friends. I can't believe it's May!!! It's moving month for  me, the weather is getting warmer each day, and this Thursday is Cinco De Mayo!!! I love to cook and Mexican food is one of my favorites! This week I am making carne asada and a Mexican street corn salad.  I will definitely share the recipe with you guys after I make it!

Like I said before Mexican food is one of my favorites we make it a lot at our house. But one thing I don't like is all of the sodium and fillers that they put in the pre packaged taco seasoning. I want to incorporate cleaner foods into my diet and life. I want to share with you my homemade taco seasoning recipe. This recipe is a small but big step to eating a little cleaner!



Taco Seasoning:

1/2 cup Chili Powder

1/4 cup Ground Cumin

1/4 cup Dried Onion

1/4 cup Paprika

1/4 cup Garlic Powder

1/4 cup Dried Oregano

1 T Kosher Salt

1/2 T Cracked Pepper


All you need to do is in a large bowl mix the ingredients thoroughly. Store in either an air tight container or you can store it in a glass mason jar. The one thing I love about this is you are in control of what goes into the seasoning. If you like something a little more spicy add more chili powder or a little cayenne pepper. If you want something a little more mild as less. You really can't go wrong and you get to make is just for you and your families needs!
