Cheddar Chicken Pot Pie

Hello sweet friends! How was your weekend? Here we are at the beginning of a new week and I have a new recipe I am so excited to share with you! I am in the fall spirit and am craving comfort foods. This last weekend I made a chicken pot pie with a twist! It was SO GOOD! It's definitely going in the recipe book for future fall and winter nights!

Cheddar Chicken Pot Pie:

1 Medium Onion diced

2 Carrots peeled and diced

2 Medium Potatoes diced

3 Stalks of Celery diced

1 Cup frozen Peas

1 Cup frozen Corn

2 Chicken Breast's cut into cubes

1/ 2 Cup of Milk

1/3 Cup of Flour

1 3/4 Cup Chicken Stock

5 Tbsp of Butter

5 Sage Leaves chopped

2 Sprigs of Thyme chopped

Salt and Pepper

Biscuit Topping:

 2 Cups Flour

6 Tbsp Cold Butter cut into cubes

1 Tbsp Baking Powder

1 Tsp Baking Soda

1/2 Tsp of salt

1/2 Tsp sugar

1 1/4 Cup Buttermilk

1 Cup Cheddar Cheese

In a large sauce pan start to cook your chicken in a little EVOO.

Once Chicken is mostly cooked through remove from pan and set aside

Add a little more EVOO to your pan and toss in all your veggies: carrots, celery, potatoes. Let those cook till slightly tender.

Then add in your butter and let melt. Once melted add in your flour, chicken stock, and milk.

Stir together then add in your chicken, peas, corn, and herbs.

Spray a baking dish with non stick oil. Pour your pot pie into the dish and start making your cheddar biscuits.

In small bowl add flour, baking power, baking soda, salt, and sugar and mix.

Then add in your butter and buttermilk. Mix until combined.

Stir in your cheese.

Place the biscuit mix on top of Pot Pie

Place in the oven and cook for 30 mins. at 375 degrees

Once it's done serve hot and enjoy!

I hope you enjoy this as much as we did! What are some of your favorite comfort food recipes! Share them in the comments below!
