Whole 30 Chili

Happy Wednesday Sweet friends! How is your week so far? Mine has been great and today I can't wait to share with you an amazing and HEALTHY recipe that a friend shared with me for my whole 30 experience. I love Chili's, Soups, and Stews so when I heard of this recipe my heart skipped a beat. This chili is packed with so many veggies and so much flavor. It's a great recipe if you have little kids as you can add as many veggies and let me tell you it's so good they won't even care. This chili has been a game changer for me and I hope you enjoy it as much as I did!

Ingredients

·         2 cloves garlic, chopped

·         2 tablespoons (30 ml) oil- I used coconut oil but olive oil is fine too!

·         1½ cups onion, diced, about 1 large onion

·          1 cup chopped celery, about 2 stalk’s

·         1½ cups carrots, peeled and diced, about 4 medium carrots

·         2 tablespoons chili powder

·         1 teaspoon ground cumin

·         1 teaspoon salt

·         ¼ teaspoon cayenne pepper (optional)

·         4 cups zucchinis, diced, about 2-3 medium zucchinis

·         2 15-ounce can diced tomatoes

·         2 Green peppers Diced

·         1 Green chili minced

Cook your onions and garlic till soft.

Add in the rest of your ingredients and let simmer for 1 hour or until the meat is cooked through.

Seriously can it get any easier! You literally just throw everything into the pot and let it cook. This recipe it a keeper and I know I will be making it again and again!

I hope you all have the BEST day!
